Remnants is a design concept for a zero waste restaurant. Using food and restaurant refuse, products are designed for an entire table setting.

The goal is a system-based line of wares that businesses can customize based on their unique waste.

Why Waste-Driven Design?

  • 1/2 lb of food is wasted per meal in restaurants.

  • 85% of that food is not composted and goes straight to landfill.

  • Food is the #1 material that goes into landfill

  • The rotting food rapidly turns to methane, adding to climate change.

The Rise of Zero-Waste

Zero/ low waste restaurants are opening all over the world.

Building their wares from waste helps create a throughline for a business; it shows a level of care an dedication in the whole experience, beyond just food. The brand identity and style (be it raw bar, alehouse or Italian bistro) is embraced by the unique materials of.

Material Explorations

There were months of testing that went into finding the perfect material composites. Among others, I worked with glass, charcoal, chalk, fish scales and bones, oyster shells, milk, eggshells and porcelain.
